RECIPES FOR PINOT NOIR PAIRINGS

Wild Mushroom Risotto (pair with Belle Glos Pinot Noir “Clark & Telephone” or another complex, bold varietal)

Prep Time: 20 min; Cook Time: 15 min; Total Time: 35 min

Ingredients:

  • 2 TBSP olive oil
  • 1 TBSP butter
  • ½ onion, diced
  • 2 tsp minced garlic
  • 1 ½ cups Carnaroi rice
  • 3 ½ oz. white wine
  • 3 oz. wild mushrooms, thinly sliced
  • 5 cups chicken broth
  • 1 ½ cup Parmesan cheese

Instructions:

  1. Melt the butter in the olive oil on low-medium heat (use a saucepan).
  2. Add the onion and cook for about three minutes until they become translucent.
  3. Add the minced garlic and cook another two minutes until fragrant.
  4. Add the rice and stir in to coat the rice well.
  5. Add the wine and stir, cooking until the wine evaporates.
  6. Add broth, cup by cup, while stirring constantly. Wait until the broth is absorbed to add another cup.
  7. In a separate pan, saute the mushrooms in melted butter, and season with salt and pepper. Add 3 oz. of broth to the mushrooms and set aside.
  8. Once the rice has cooked for about 13 minutes, incorporate the mushrooms.
  9. Cook another four minutes and add ½ cup Parmesan. Turn off the heat.
  10. To serve, plate and sprinkle more cheese on top.
