Facts You May Not Know About Tequila

  1. Tequila is not made from a cactus but from the heart of the blue agave plant, or Agave tequilana weber, a succulent closely related to the lily that is native to Mexico. The “piña,” or heart of the plant, can weigh as much as 200 pounds when harvested.
  2. When the Spanish conquistadors ran out of their own brandy, they began to distill agave to produce one of North America’s first indigenous distilled spirits.
  3. Like cognac, champagne, and some fine wines, tequila can only be produced in five regions in Mexico—Guanajuato, Michoacán, Nayarit, Tamaulipas, and Jalisco – in an area surroundings the town of Tequila which is 65 km (40 mi) northwest of Guadalajara. If the label does not say “Hecho in Mexico,” it may be an agave spirit but is not genuine tequila.
  4. Like wine, terroir can influence the taste of tequila. The flavor is influenced by yeast (which can be commercial or wild) and the type of soil the agave is grown in. Tequilas from the Highlands (Los Altos) are often grassier and sweeter, while Lowland (El Valle) tequilas have an earthier, more mineral quality.
  5. There are several aging categories of tequila: blanco (white), plata (silver), joven (young), oro (gold), reposado (rested), añejo (old), or extra-añejo (extra old). Each is dependent on how long the spirit sits before being bottled, as well as what container it’s kept in.
  6. There are only about 150 distilleries in all of Mexico and most of them make tequila for multiple brands. There are currently about 2,000 tequila brands. The NOM Number on the label is proof that the tequila meets standards set by the Mexican government and the specific number is associated with the distillery where the tequila was produced.
  7. During the 1918 Spanish flu epidemic, patients were instructed to drink tequila with lime and salt to ease their symptoms. Today, tequila is not considered a cure, but may still help sooth sore throats, ease congestion, and aid with sleep.
  8. You may have heard of the worm at the bottom of the tequila bottle, but this was merely a marketing ploy. In fact, NOM (Normas Oficiales Mexicanas), prohibits the placement of worms in tequila.
